Halibut en Papillote

Baking the halibut in a parchment paper packet keeps this fish incredibly moist and delicious...

Ingredients

  • 8 slices lemon
  • 4 6-ounce halibut fillets
  • Salt and pepper
  • Olive oil
  • 12 ounces small new potatoes (any variety), quartered
  • 6 ounces green beans
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1 large shallot, thinly sliced

Directions

1. Preheat oven to 450. Lay out four sheets of parchment paper and place a halibut fillet in the center of each. Top each fillet with two slices of lemon. Sprinkle with salt and pepper and drizzle with olive oil. Roll edges of paper together (starting lengthwise) to fully enclose each fillet in a packet.

2. Place parchment packets on a baking sheet and bake at 450 for 12 minutes. Remove packets from oven and allow to rest.

3. Boil potatoes until almost tender. Add green beans and boil until crisp-tender. Drain well and keep warm.

4. Open each packet and pour liquid into a bowl. Add 1 tablespoon olive oil, vinegar, lemon juice, mustard, garlic, salt and pepper and stir with a whisk. Add potatoes, green beans and shallot and toss to coat.

5. Divide vegetables onto four plates. Top each with a halibut fillet.

Serves 4
